Sour Cream and Onion Turkey Patty Melt

I stole this recipe from Rachael Ray, and it is delish!

Ingredients

    2 tablespoons vegetable oil 1 1/2 pounds ground turkey

  • 1/4 cup sour cream
  • 4 scallions, chopped (both white and green parts)
  • Salt and ground black pepper
  • 2 tablespoons butter, divided
  • 8 deli-style slices Muenster cheese
  • 8 slices pumpernickel bread (Which I wasn’t able to find so I just used whole wheat instead.)

Preparation

Place a large skillet over medium-high heat with 2 turns of the pan of vegetable oil, about 2 tablespoons.

 In a large mixing bowl, combine the ground turkey with the sour cream, scallions, salt and ground black pepper.

Using your hand, score the meat into four, then form four thin patties about half an inch thick out of each portion, adding them to the hot pan as you shape them. Cook until the patties are golden brown and cooked throughout, about 6 minutes per side. When finished cooking, remove the patties from the pan and wipe the pan clean with a paper towel.

While the patties are cooking up, place 4 slices of bread on a clean work surface and butter one side of each piece. Return the pan that the patties were cooked in over medium heat and add in the remaining butter. Once melted, place the remaining unbuttered slices of bread in the pan, place one piece of cheese on each slice, a turkey patty, one more slice of cheese and cap each off with the four slices of buttered bread, butter side up.

Cook sandwiches in the pan until toasted and the cheese has melted, about 2 minutes per side. Got to serve it with sour cream and onion chips, it’s the best!

Yummy Strawberry Cream Cheese Pie

This is the BEST pie ever. And right now it’s all I can think about. So I am making two, one for Easter and one for me! That’s right back off Kenny :) It is a melt in your mouth pie crust that taste like shortbread, and a whipped cream cheese filling topped with lots of fresh strawberries. MmmMmmm!

Filling:

  • 1- 8oz package of cream cheese softened
  • 1 small container of cool whip
  • 6 tbsp powdered sugar
  • 2 tablespoons of vanilla
  • About 4 cups of fresh strawberries cut lengthwise (or any fruit of your choice, pineapple is yummy too)

For Crust:

  • 1/2 cup of clog up your guts and arteries Crisco (ha-ha)
  • 2 cups of flour
  • 1/2 teaspoon of salt
  •  2-4 tbsp of cold water

You will also need a pastry blender/cutter and wax paper for this crust!

Step one: In a large bowl Crisco into 2 cups of flour, DO NOT MIX! Cut the Crisco in until fine and crumbly.

Next add one tbsp of cold water to the mixture at a time. You want to mix the mixture and water with your hands making into a ball of dough using up to 4 tbsp of water to hold together.

Let sit refrigerated about 10 mins, cut ball of dough in half. (dough is enough to make two pie crust or one pie with with a top)

Step two: On a flat surface lay a piece of wax paper down, sprinkle with flour. Place ball of dough in the center, sprinkle another piece of wax paper with flour, lay on top of dough (so that the ball of dough is sandwiched between two pieces of wax paper). Using a rolling pin starting from the center and rolling outward, roll out dough into a circle that is slightly larger than the pie plate.

Next peel off top layer of wax paper, flip dough into greased pie plate and peel off other side of wax paper. (see below). Finally poke crust with fork all over and bake at 350 for 40-45 minutes. Let cool completely.

Step Three: Meanwhile combine softened cream cheese, cool whip, and powdered sugar in bowl until mixed together and creamy. Add vanilla and stir. Add filling to pie crust and top with strawberries.

Cookbook Recipe# 2: Gourmet BBQ Chicken Pizza

Here is one of my favorite and easiest recipes to make.

Here is what you need:

Premade, or store bought pizza crust (Boboli works great for me)

1 1/2 c. of shredded cheese (cheddar, Mexican, Colby jack any of these work great)

1/2 c. cooked diced up chicken breast (also rotisserie chicken works well too)

about 1/3 c. of BBQ sauce

1/2 sliced red onion

1/2 can of corn

1/2 can of black beans

chopped up cilantro

Cook chicken in BBQ sauce until cooked through, dice into small pieces. If using rotisserie chicken peel off white meet and drizzle a little bit of BBQ sauce on meat, stir to coat.

Meanwhile, add 1/2 can of black beans and 1/2 can of corn to colander. Rinse, mix, and drain well. (Sometimes I find it easier to add the entire can of both the black beans and the corn, since this recipe only calls for 1/2 of the corn and bean mixture, you can freeze half of the mixture for your next BBQ chicken pizza)

Next, place your boboli crust on a pizza baking pan, or a flat cookie sheet

Pour BBQ sauce over pizza crust. You do not want too much, just enough to spread evenly on top of crust, spread to the outer edges leaving about an inch of crust exposed without sauce around the outer edges.

Sprinkle cheese over BBQ sauce enough to coat evenly, next sprinkle chicken evenly over cheese.

 Place the corn and bean mixture on top of chicken evenly coating pizza.

Add another layer of cheese on top of the corn and bean mixture, sprinkle to coat. Next sprinkle slices of red onion and chopped cilantro on top of pizza.

Bake at 375 for 30-40 minutes or until cheese is bubbly. Goes great with a side salad.

Valentines Dinner

For Valentine’s day, we stayed in and I made a nice dinner. It was alot of fun.

My hubby brought me home this beautiful rose filled vase for Valentine’s Day, it looked perfect on the table.

Dinner consisted of; marinated rib eye steak, buttered shrimp, sauteed green beans, and roasted garlic mashed potatoes.

Now that is called love….to have made shrimp for the boy. I hate seafood, and typically can’t even stand the smell of it. I got through it, and he loved it. It was worth all the gagging!

And for dessert, what other than homemade chocolate covered strawberries….

Cookbook Recipe#1

So, part of my new years “plans” for this year was to create a cookbook. Part of the reason is that I love to cook, and family and friends frequently ask me for the recipe. The only problem with giving it to them is the fact that I don’t really ‘follow’ any one particular recipe. Alot of the food I make are either a combination of multiple recipes along with my own ideas, or just something I make on the fly with what I have. This sucks when you end up with a great meal but no way of identically recreating it. So here it begins, cookbook recipe# 1.

cheese ravioli with marinara Alfredo meat sauce w/ Italian salad and pesto bow ties

Cheese ravioli w/ tomato-fredo meat sauce ingredients:

-1 jar of spaghetti sauce

-1 jar of Alfredo sauce

-1lb. of ground beef, or ground turkey

-1 brown onion diced

-1 packages of frozen cheese ravioli or any cheese filled pasta

Brown meat and onion

Pour Alfredo, and spaghetti sauce into skillet with browned meat. Let simmer.

Cook cheese ravioli according to package.

Pour meat sauce over ravioli and top with Parmesan cheese.

Italian Salad Ingredients:

-Chopped green leafy lettuce (variety mix is best for this salad)

-Mozzarella cheese shredded (about 3 oz)

-Peperoccinis sliced

-Red onion sliced

-Italian dressing

Mix ingredients together. If you do not have Italian dressing using oil and vinegar works well too.

Pesto Bowtie Ingredients:

-Prepared pesto spread

-1 can of crescent rolls

-1 tbsp of butter

-garlic powder

Unroll crescent rolls to lay flat, spread prepared pesto sauce over each triangle and roll up. Place on ungreased baking sheet and cook at 375 for 12 mins

While cooling crescents, add butter to microwavable dish and add garlic powder. Brush melted butter mixture over crescents.
